[🇬🇧 below] Happy birthday MISO! 🥳 Dieses erste selbst gemachte Miso hab ich genau auf den Tag genau vor einem Jahr ins Glas gepackt, heute war der grosse Tag, das Miso zu kosten! Ich hab im Glas direkt auf das Miso eine runde Scheibe Packpapier gelegt (mit Salz rundherum) und dann in ein Plastiksackerl zwei Scheiben Karton gelegt und mit einem Sackerl Salz beschwert. Also, es hat sich ein wenig Tamari gebildet und zwischen dem Packpapier und dem Plastik hat sich auch etwas gebildet, das ein wenig wie eine dünne Haut aussieht (siehe Folge-Foto). Ich hab keine Ahnung, was das sein könnte, aber das Miso riecht gut, das Tamari auch, ich habs mal ausgefiltert und vom Miso selbst die oberste Schicht weggeben. Wenn Ihr das auch schon mal erlebt habt, Hinweise sind willkommen (falls ich morgen noch lebe 😉).

Happy birthday MISO! 🥳 I made this very first homemade miso exactly 1 year ago and today was the big day to taste it! A year ago I’ve placed some parchment paper directly onto the miso, sprinkled a bit of salt around, and on top i placed a plastic bag filled with some round cardboard sheets in the size of the jar and some package of salt to weigh it down - now between the parchment paper and the plastic bag i found something that looks and behaves like a thin skin, and I have no idea what this might be or if it might be bad. I have filtered the tamari through a sieve so far and scooped off the first 1 cm of the miso to be safe. If you have any idea what this "skin" might be, hints are always welcome (if I am still alive by tomorrow that is 😉)

[🇬🇧 below] Es hat recht lange gedauert, bis ich mich endlich (!) getraut hab, meinen eigenen Koji herzustellen. Ich hab super viele Videos von @cultures.group angeschaut, das Buch "Koji Alchemy" studiert, mir schlussendlich Aspergillus oryzae sporen bestellt und das ist das Ergebnis, mit dem ich super zufrieden bin! Aus dem frischen Koji hab ich Shio Koji und Amazake gemacht, und jetzt freu ich mich schon auf weitere Experimente! 😀

It took a really long time (!) until I had the courage to make my own koji. I watched tons of videos by @cultures.group, studied the book "Koji Alchemy", then finally I ordered some Aspergillus oryzae spores and now this is the result with which I am super happy! Using the fresh koji I made some shio koji and some amazake, and now I am looking forward to further experiments! 😀

[🇬🇧 below] Mein allererster Versuch, eine "Focaccia di Recco" zu machen - und ich bin sooooo stolz auf das Ergebnis, dass ich nach langer langer Zeit mir endlich wieder mal die Zeit nehme, hier was zu posten. 😊
Zutaten: selbst gemachter gezogener Strudelteig, ein spezieller Käse names Stracchino, eine grosse Menge Olivenöl und grobes Salz.

Ingredients: a self made (streched) strudel-dough, a special Italian cheese called "Stracchino", a lot of olive oil and coarse salt.

[🇬🇧 below] Ich hab jetzt ewig lang nichts mehr hier gepostet ! Warum ? Weil ich gerade sooooooooo viel zu tun gehabt hab in meinem Hauptberuf als Künstlerin. Nach einer langen Phase in 2020, in der Corona-bedingt quasi Kunst-Zwangs-Pause war, war es in den letzten Monaten genau umgekehrt. Aus irgendwelchen Gründen ist die Art von Kunst, die ich mache, nämlich generative Kunst, quasi über Nacht zum totalen Hype geworden und jetzt musste ich natürlich die Gunst der Stunde nutzen um so viel wie möglich zu produzieren und zu verkaufen - weil wer weiss wie lange der Hype noch anhält ?
Am Foto seht ihr meinen Geburtstags-Lemon-Meringue-Pie von vor 10 Tagen, den hat mir mein Mann auf Wunsch gebacken! Lecker wars! 😛😛😛

i haven’t posted here for ages! why? because I was absolutely busy with my main profession as an artist. after a long art-break in 2020, forced by everything shut down because of covid (museums, festival, cinemas and so on), the last few month were the opposite of calm: for some reason the kind of art that i am doing for the last 25+ years has become totally fashionable, more or less over night. so i thought i should make the best out of the current hype and produce and sell as much as i can, because who knows how long this will all last?
on the photo you can see my birthday-lemon-meringue-pie from 10 days ago, which my husband made for me "on demand"! it was super yummy! 😛😛😛

[🇬🇧 below] Hier gibts noch ein "Urlaubsferment": Kapuzinerkressesamen, fermentiert in 3% Salzlake. Zwischendurch riecht das Ferment extrem start nach Sulfur, aber nach ein paar weiteren Tagen Fermentation verflüchtigt sich der Geruch. Ich find sie super lecker, mein Mann hat gemeint er muss erst "lernen, sie zu mögen" 😄

One more "holiday-ferment": seeds of nasturtium, fermented in a 3% brine. In the beginning of the fermentation there is an intense smell of sulfur, but after a few more days this smell goes away. I think they are super yummy, but my husband said that he "still has to learn to like them" 😄

[🇬🇧 below] Bevor ich drauf vergess, ich hab ja auch noch ein paar Fotos von den Fermenten, mit denen ich in meinem Urlaub ein wenig experimentiert hab, hier hab ich grüne Hollunderbeeren fermentiert und dann noch überkocht (Achtung giftig, wenn roh!) - in ca. 2 Monaten werd ich mal ein Glas aufmachen und kosten, was dabei herausgekommen ist - und sehen/schmecken, ob sich der Haufen Arbeit auch gelohnt hat 😉

Before I forget, I still have some photos of the experimental ferments that I started during my holiday - here you can see fermented and slightly boiled green elderflower berries (they are poisonous when they are raw, be careful!) - in about 2 months I will open a jar and see if all that work was worth it 😉
