[🇬🇧 below] Reispapier-Pölsterchen, JA, es funktioniert tatsächlich, ABER ... Das Reispapier klebt sich derart in die Zähne, dass man glaubt, man wird bis an sein Lebensende mit Reismasse im Mund herumlaufen müssen, kein Scherz ! Mit Zahnstocher und Zahnbürste bewaffnet kommt die Panik auf, dass man sich beim Versuch, die in die Zähne gepickte Reismasse wieder raus zu bekommen, versehentlich eine Zahnplombe oder gleich einen ganzen Zahn herausreisst... Und ich übertreibe ausnahmsweise nicht, ehrlich ! Fazit: sieht super aus, ist aber zum Verzehr eher untauglich. Aber ... probieren wird man ja noch dürfen... 😉

Rice paper pillows, YES it works, BUT... As soon as the rice paper dissolves in your mouth it gets insanely sticky, and for a while you'll feel like you're doomed to run around for the rest of your life with sticky clumps of rice paper goop stuck to your teeth. If you try to clean it off with a toothbrush and toothpicks you can easily start panicking that you might lose a filling, or even a whole tooth. I am not exaggerating, really! Conclusion: looks awesome on the videos, not really meant for eating. Well, I had to try... 😉

[🇬🇧 below] Selbstgemachte Udon Nudeln - vom Mehl zur Nudel mit viel Spass beim Draufsteigen. Der Teig ist so fest, dass man zum Kneten die Füsse verwendet (der Teig ist bei mir dabei im Zipplock-bag).

Für 2 Suppen mit viel Nudeln nehm ich
120g Mehl
17.1g Tapiokastärke
61.7g Wasser
6.9g Salz
Für die Fuss-Knet-Technik und wie man den Teig dabei faltet ist es wohl am besten, sich ein Online-Video anzusehen.

Homemade Udon Noodles - from the flour to the ready made noodles with a lot of fun stepping on the dough. The dough is so stiff that it needs the feet to knead it (I put the dough into a zipplock bag for that purpose).
.
For 2 soups with a lot of noodles I use
120g all purpose flour
17.1g tapioka starch
61.7g water
6.9g salt
To see how to use the feet for kneading and how to fold the dough it is probably best to watch an online video.

[🇬🇧 below] Zwei meiner Sommer-Projekte:

1) Sauerteig Tianmanjiang: getrocknete Brotwürfel gedämpft und mit Koji-Sporen inokkuliert + Wasser + Sauerteigstarter + Salz (10%) + Zeit (gestartet am 05.06.2023) - inspiriert von @crockoftime

2) Melanzani Shoyu: Saft von gegrillten und geräucherten Melanzani + Koji + Salz (12%) + Zeit (gestartet am 18.06.2023 ) - inspiriert von @bullock_corey

Beide Gläser haben den Sommer im Freien in der Sonne verbringen dürfen und sind deswegen schon heftig reduziert - es hab mit viel grösseren Gläsern begonnen, aber ein bisschen was hab ich schon herschenken müssen bzw. kosten wird man wohl noch dürfen! 😉😋

Beides inspiriert u.a. von Ken Fornatoro von @cultures.group (ich kann eine Subscription wärmstens empfehlen!) und von #kojicon

1) Sourdough Tianmanjiang: dried bread cubes inocculated with koji spores + water + sourdough starter + salt (10%) + time (started on the 5th of June 2023) - inspired by @crockoftime

2) Melanzani Shoyu: Juice of grilled and smoked aubergines + koji + salt (12%) + time (started on the 18th of June 2023) - inspired by @bullock_corey

Both jars were sitting outside in the sun during summer and the content is already quite reduced - I started with way bigger jars, but I already had to give away a little bit, and tasting a little bit every now and then should be allowed, right ? 😉😋

Both also very much inspired by Ken Fornatoro of @cultures.group (i can really recommend a subsription!) and by #kojicon

[🇬🇧 below] Heute hab ich mich zum allerersten Mal an Bagels versucht, eigentlich schon seit gestern, weil es gibt bei diesem Rezept eine kalte Gare für die schon geformten Bagels im Kühlschrank über Nacht. Bis auf das zu kleine Loch in der Mitte und das fehlende Natron im Kochwasser (das hab ich durch Malz und Zucker ersetzt) hat es super gut geklappt - und auch geschmeckt ! 😋

Today it was the first time ever that I was courageous enough to try out some bagel recipe, actually I already started yesterday as this recipe asks for proofing the shaped bagels over night in the cold fridge. Besides the too small hole in the middle and the missing lye in the boiling water (that I replaced with some malt and brown sugar) everything worked out pretty well - and also tasted really yummy! 😋
